Gunpowder / Malgapodi

Malgapodi is a South Indian spice mix traditionally served with Idlis and Dosas. Is also called Gunpowder as it is a very spicy preparation. Goes well with Rice and Uttapams too.


  1. Chana Dal ½ cup
  2. Urad Dal 1 cup
  3. Red chillies whole 5-10
  4. Hing a generous pinch
  5. Salt to taste
  6. Sesame oil


  1. Roast half cup Chana Dal
  2. Roast one cup Urad Dal with 5 to ten whole red chillies (can change depending on how spicy you want it).
  3. Switch off the flame.
  4. Add a generous pinch of hing and salt to taste.
  5. Once it cools down, grind into a coarse powder.

Is best  eaten with dosa or idli, mixed with oil (traditionally hot sesame/til oil) to form a chutney like paste.
